Convenience Vegetable Soup
Preparation Time: 15 minutes
Ingredients:
1 10 ounce pkg. frozen cut
green beans
1 10 ounce pkg. frozen
peas
1 10 ounce pkg. frozen
lima beans
1 10 ounce pkg. frozen cut
asparagus
1 10 ounce pkg. frozen
chopped organic spinach
2 15-ounce cans no salt
aded diced tomatoes
2 15-ounce cans no salt
added black beans
1 cup no salt added tomato
sauce
1 tablespoon minced onion
flakes
1 bay leaf
1/2 teaspoon dried
thyme
1 1/2 teaspoons dried
basil
1/4 teaspoon garlic
powder
4 cups water
black pepper to
taste
Instructions:
In a large soup pot, combine all ingredients. Bring to a boil over medium heat, stirring occasionally. Use a spoon to break up large clumps of frozen vegetables. Cover and reduce heat to medium-low and simmer 1 hour or until vegetables are tender. Remove and discard bay leaf before serving.

Ingredients:
3-5 cups packed any
combination of non-starchy vegetables, leaves, onions, etc.
1 small to medium carrot
(optional)
1 small beet root
(optional)
1 small piece raw ginger
(optional)
1/2-1 cup beans - your
choice
1 apple, orange, or 1 cup
berries,
1/4 cup ground
nuts/seeds
Instructions:
Take all vegetable and nut/seed ingredients of your choice and chop fine/mix together in food processor.
Transfer the mixture to a large, non-stick fry pan and add the beans. Heat and stir until about body temperature.
Add dressing if desired
Multiply ingredients to make more servings
